Zucchini slice is quick to make as it’s all baked in the one dish, loaded with veggies, (it’s an easy way to use up veggies that may be looking a little soft in the fridge😉).
Plus it’s packed full of essential nutrients, including protein from those eggs! 💪

Ingredients:
- 5 Eggs
- 1 large zucchini, peeled
- 400g carrot, peeled and grated
- 1 1/2 cups of canned corn kernels or frozen peas, drained
- 1 medium brown onion
- 2 tsp dried mixed herbs
- 3/4 cup wholemeal self-raising flour
- Pepper
- 1 cup reduced-fat cheddar cheese. grated
- olive or canola oil spray
Method:
1️⃣ Preheat oven to 200°C (180°C fan-forced). Whisk eggs in a medium jug, season with black pepper and set aside. In a large bowl, combine the remaining ingredients. Add eggs and stir the mixture until well combined.
2️⃣ Spray a large baking dish with oil. Pour in zucchini mix and flatten with a spoon.
3️⃣ Bake for 40-45 minutes or until firm and golden brown.
4️⃣ Rest in the pan for 10 minutes before dividing into 6 pieces and cutting into slices.
