Pasta Ingredients
- 170 gram wholewheat fusilli pasta
- 3 cups small broccoli florets
- 2 cups shredded cooked chicken (or turkey)
- 1 cup grape tomatoes, halved
- 3/4 cup prepared pesto
- 1 tablespoon lemon juice
- 1/8 teaspoon salt
- 1/4 cup of grated parmesan cheese
- 1/4 teaspoon freshly cracked black pepper (optional)
Instructions
- Bring a large pot of water to boil. Add pasta; cook for 3 mins or according to the package directions.
- Add broccoli and continue cooking for approximately 3 more minutes, until the pasta is tender and the broccoli is tender-crisp.
- Drain and return the pasta and broccoli to the pot.
- Stir in chicken (or turkey), tomatoes, pesto, lemon juice and salt.
- Serve and top with parmesan and pepper. You can also garnish with fresh coriander for an extra burst of flavour.
