Whip Up a Wholesome Delight: 20 Minute Chicken Pesto Pasta

Pasta Ingredients

  • 170 gram wholewheat fusilli pasta
  • 3 cups small broccoli florets
  • 2 cups shredded cooked chicken (or turkey)
  • 1 cup grape tomatoes, halved
  • 3/4 cup prepared pesto
  • 1 tablespoon lemon juice
  • 1/8 teaspoon salt
  • 1/4 cup of grated parmesan cheese
  • 1/4 teaspoon freshly cracked black pepper (optional)

Instructions

  1. Bring a large pot of water to boil. Add pasta; cook for 3 mins or according to the package directions.
  2. Add broccoli and continue cooking for approximately 3 more minutes, until the pasta is tender and the broccoli is tender-crisp.
  3. Drain and return the pasta and broccoli to the pot.
  4. Stir in chicken (or turkey), tomatoes, pesto, lemon juice and salt.
  5. Serve and top with parmesan and pepper. You can also garnish with fresh coriander for an extra burst of flavour.
