Indulge in this guilt-free banana muffin recipe by our dietitian, Kristen Varnis. These delightful muffins are packed with wholesome ingredients like ripe bananas, wholemeal flour, and antioxidant-rich blueberries. They are the perfect balance of flavour and nutrition to nourish your body.
Ingredients
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1/3 cup extra virgin olive oil
- 1/2 cup maple syrup
- 3 ripe bananas, mashed
- 1/4 cup milk
- 1 teaspoon baking soda
- 2 eggs
- 1/2 teaspoon cinnamon
- 1 3/4 cups wholemeal plain flour
- 1/3 cup rolled oats
- 1 cup blueberries or raspberries (fresh or frozen)
Method
- Preheat oven to 165C. Spray a muffin tray with nonstick spray or line it with cupcake liners.
- Combine flour and oats in a bowl, then fold the blueberries.
- In a large bowl, whisk together olive oil and maple syrup. Add eggs and whisk well.
- Mix in mashed bananas and milk, followed by baking soda, vanilla extract, salt, and cinnamon.
- Divide the batter evenly between the muffin cups, filling each cup about two-thirds full. Sprinkle the tops of the muffins with a small amount of oats (1tbsp total).
- Remove muffins from the tin and cool on a cooling rack for 5 minutes.
- Bake the muffins for 22-25 minutes, or until a toothpick inserted into one comes out clean.
